Total Time: 25 minutes Makes: 6 sandwiches
Slice 6 potato buns in half horizontally. Spread cut sides with butter and grill, broil or pan-fry until golden. Set aside. // In a large saucepan over medium-high heat, sauté 2 large yellow onions, finely chopped, 6 cloves garlic, minced and 10 tablespoons butter, until onions are soft, 5-10 minutes. Add 1¾ cups chili sauce or ketchup, ½ cup packed dark brown sugar, ½ cup Worcestershiresauce, 9 tablespoons cider or white-wine vinegar, 1 cup black coffee or water, ½ teaspoon ground ginger, 1 teaspoon prepared horseradish, 3 teaspoons chili powder, 2 teaspoons salt, ½ teaspoon pepper and 3 drops hot sauce. Bring to a boil, reduce heat and simmer 5 minutes. (If sauce is too thick, add more black coffee or water to thin.) Add 7 cups shredded cooked turkey, preferably dark meat, and simmer 1-2 minutes. Taste and adjust seasoning as needed. // Assemble sandwiches: Divide turkey mixture and 6 cups shredded iceburg lettuce among bottom halves of buns. Top sandwiches with remaining bun halves. Cut each sandwich in half to serve.
